Alright ladies… I did it! I successfully completed my five day cleanse with absolutely zero sugar and carbs. Sugar sure is hidden in everything. This time, the first day was by far the worst. By day 4 I was feeling so great. My mind was clearer, the bloat was already going down. In five days I lost just over 5 pounds. The weight is truly just the beginning though. The difference in the way I feel is incredible.
When I eat low carb people are always asking what my favorite meals are. This is one of my go to meals. I make a huge batch one night for dinner and can also get a few lunches out of it. Its quick and easy. I must say it is so much easier than it was to make this two years ago thanks to the popularity of low carb nutrition. There are so many vegetable alternatives readily available now. In the past, I had made my own riced cauliflower with my Vitamin. Not anymore! This convenience, recipe ready cauliflower makes life so easy!
If you haven’t noticed yet… I’m not one for measuring when I cook. This isn’t baking. There is no need to be precise. Here is what you’ll need:
- Chicken breasts or tenders (about a pound) cut into small pieces
- Riced cauliflower (about one head of cauliflower)
- Mixed vegetables (about 1/2 a bag of frozen veggies is perfect)
- 2 cloves garlic, minced
- 1 yellow onion, diced
- Braggs liquid aminos
- 1 egg, beaten
I start by sautéing my onion and garlic in a little bit of liquid aminos of medium heat in a large sauté pan. After about 2-3 minutes add in the chicken and cook until no longer pink, stirring every few minutes.
Once the chicken is cooked through add in the riced cauliflower. It looks like a ton initially but it will become less volume as it cooks.
Drizzle a bit more Bragg’s liquid aminos (no idea how much… a few squirts from the bottle will do). Cook for approximately 2 minutes, stirring frequently.
Then, dump in your frozen veggies and cook for another 2 minutes, stirring frequently two heat through.
Once your veggies are heated through, use a spatula and make a little room on the side of your pan and add the beaten egg.
Scramble the egg slightly, then mix with the other ingredients. Let cook for about a minute and your dish is ready to go. Serve warm!
I like my cauliflower to have a bit of substance to it. I don’t prefer it to be mushy, particularly because I’m likely to reheat it for leftovers for lunch. If you’d prefer it softer, just cook a little longer at the end.
You could get really creative with this and add different veggies! Its delicious and filling! The first time I made this my husband thought it was good old fried rice, he had no idea it was cauliflower. He has an opposition towards vegetables so that should tell you how good this is!
