I love pizza. I absolutely love pizza. So when I’m low carb, I find every possible way to make pizza. I love cauliflower crust pizza and Portabello Mushroom Cap pizza… but sometimes while my kids are chowing down on our favorite pizzeria pizza, I need something a little extra special. That is where this specialty comes in.
I found a recipe that called for a sweet potato crust with almond flour. Sounded pretty good, but I decided to modify it a bit and make it even more low carb. I eliminated the flour all together and I have to say, it was pretty darn delicious. I even reheated it for lunch today and although it lost its crispiness in the microwave, it was still satisfying.
So here is my version… I hope you like it as much as I do!
Ingredients:
Crust:
- 3 sweet potatoes
- 1 egg
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 tsp dried basil
- salt and pepper to taste
Toppings (you can do whatever you want but this is a good combo)
- shredded rotisserie chicken (a handful)
- 1 cup chopped spinach
- 1 red onion sliced
- 3/4 cup barbecue sauce
Start by cooking the potatoes. I just scrub them, prick a few holes in with a fork and put them in the microwave for about 7-8 minutes. They should be fork tender. Let cook and peel. Place in large mixing bowl.
Add in spices and egg.
Mash. Simple right. I just used a metal potato masher.
Use a spatula and spread out on a pizza stone if you have one. If not, just grease a large pan with some olive oil.
Cook at 400 for 30-35 minutes.
While thats cooking, chop up your spinach. I love my herb scissors. I use them for all my fresh herbs. They make chopping super easy, plus it looks pretty too. Something about pretty vegetables makes me happy.
Thinly slice your red onion and sauté it in a bit of olive oil soft. I like to caramelize them a bit, gives it such good flavor.
Once your dough has cooked remove it from the oven and spread the barbecue sauce over the dough. Reserve any extra to drizzle on at the end. Remember, barbecue sauce can be loaded with sugar. If you are doing low carb, you’ll want to find a sugar free sauce. This is my favorite.
Cover your pizza with onion, chicken and chopped spinach. If you have any extra barbecue sauce drizzle it over the top.
Put it back in the oven for 10-12 minutes.
