I am loving all the fresh vegetables coming out of my garden right now. This morning, I picked cucumbers, zucchini and tomatoes. I decided it was time to get back on the carb free train this week so I went back out to the garden and pulled this delicious head of cabbage.
About two years ago I lost 45 pounds by following a clean eating, low carb plan. It worked. I kept it off for two years. However, the last three months or so I’ve managed to put about 15 of those pounds back on. Life has been busy. I haven’t been exercising like I was enjoying so much because of lack of time. But I felt so much better when I was eating clean and exercising. So I’m back on board.
One of my favorite low carb meals is cabbage and kielbasa. It is so easy and I’m super excited to use cabbage fresh from the garden for this one!
Here is the recipe! I use recipe loosely as always because as usual, there is no measuring.
Ingredients:
- one head of cabbage, chopped
- one sweet onion diced
- three cloves of garlic, minced
- kielbasa (any kind will do), sliced thin
- 3 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon paprika
First thing is first. Dice up that delicious fresh cabbage. Did you know that cabbage is a rich source of vitamins C, K, B6 and B9? It also contains fiber and iron, is low in saturated fat and cholesterol. One cup of raw cabbage contains 190% of the recommended daily amount of Vitamin C. Sounds good right?
Melt the butter in a large saute pan. Add in the garlic and onion and cook over medium heat until the onion is translucent.
Add in the kielbasa and sausage and give it a stir. Add in the salt, pepper and paprika. I have no idea what actual quantity I used… a couple pinches of salt, a few turns of the pepper grinder and shake of paprika.
Continue to stir every few minutes while it cooks over medium heat until the cabbage is slightly wilted.
That is it. Easy. And this makes enough for three lunches so I’m good to go for a large portion of the week!
I’ve also made this with Italian Sausage and Turkey Sausage. They are all good!
