Don’t be afraid! The ever abundant zucchini just keeps coming! I’m desperate to find ways to use them quickly and not let them go to waste. I came across this recipe for Cheesy Garlic Zucchini Bread from gatherforbread.com and had to try it out! I give it two thumbs up and so does my family! Warm out of the oven with a little bit of butter! Yum! So nice to have a different spin on the usual sweet, dessert like zucchini bread that we usually make around here.
I served this with some delicious pasta and chicken from the Instant Pot (one of my newest obsessions). It was the perfect side and so delicious! Bonus, its really simple!
Ingredients:
- 3 cups all-purpose flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon garlic powder
- 1 cup shredded zucchini ( I used a little more)
- 3/4 cup shredded cheddar cheese
- 1/4 cup of finely chopped green onion
- 1 tablespoon fresh dill (or 1 teaspoon dried)
- 2 large eggs
- 1 cup buttermilk
- 4 tablespoons of butter, melted (plus more for serving)
Instructions:
- Preheat oven to 350 degrees. Grease your loaf pan.
- In a large bowl add the four, baking powder, salt, baking soda and garlic powder. Whisk to combine. Add the zucchini, cheddar, green onions and dill and stir.
- In a separate bowl, combine the eggs, buttermilk and butter.
- Pour the wet ingredients into the dry ingredients in the large bowl. Gently stir until moistened. It will seem pretty dry, keep mixing gently until its all incorporated.
- Spoon into your pan and bake for about 45-50 min (until a toothpick inserted in the center comes out clean)
- Slice and serve warm. With a bit of butter on top of course.
