Sweet summer peaches. Is there anything better than biting into a ripe peach? That sweet taste and juice running down your hand? Yum. I can taste it now. The last couple of years I have made a point to not miss getting my fresh Georgia peaches from The Peach Truck. Holy smokes. These are the best peaches I have ever had. All 25 pounds of them. Yep 25 pounds of peaches all ripe at once.
What does this mean? A weekend full of peaches. One of my go to recipes is this sweet and Savory Peach salad. It pairs perfectly with some chicken basted in homemade Peach Barbecue Sauce.
Serves 6-8
Ingredients:
- 6-8 ripe peaches sliced/diced (doesn’t matter it all tastes the same)
- 8 oz crumbled goat cheese
- 3 tablespoons chopped fresh basil
- 1/4 cup raw honey
This couldn’t be easier. The only problem may be trying not to eat all of those peaches you are chopping up. My oldest couldn’t resist. She must have eaten three peaches while I was chopping.
Theres no need to peel them. Cut them up whichever way you choose. Add in the crumbled goat cheese and basil. Mix gently and then drizzle with honey. Give another gentle stir. I find it tastes best if left to sit for 15-20 minutes before serving.
While your main course is on the grill you can quickly whip up this delicious side. I could eat an entire bowl of this as a main course. Unfortunately everyone else wants some too.
